Qualifications
Certificate 1 in food processing Retail Baking. (Baker)
Certificate 111 in Food Processing Retail Baking Combined of overseas equivalent (Baker)
Employment Experience
2 Years with qualifications (Baker)
3 Years without qualifications (Baker)

Essential Skills
The candidate filling the position will be expected to have the following skills:
* Ability to produce bread and other baked goods using manual and/or industrial processes
* Knowledge of raw materials for dough, dough preparation times and procedures and various baking techniques
* Knowledge of recipes and production techniques for bread and baked goods
* Ability to operate electric, gas and wood-fired bread ovens
* Knowledge of health, safety and hygiene regulations for food preparation
* Ability to multitask
* Physical strength and stamina
* Organizational and planning skills
* Ability to remain calm and focused in a fast-paced environment
* Team spirit, with a customer-focused attitude
* Flexibility to work in early morning shift
* Willingness to work nights
* Excellent time-management skills
Main Tasks
* Diagnose and respond to product and process faults in bread and pastry
* Conduct final mould and final proof
* Scale and mould dough for intermediate proof
* Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread
* Emptying, cleaning and greasing baking trays and tins
Responsibilities
The candidate filling the position will be responsible for the following:
* Designing and improving recipes with head bakers.
* Measuring and combining ingredients and using mixers, blenders, heat sources, and other equipment to make baked goods such as:
* SOURDOUGH BREADS
* CONTINENTAL BREADS
* BAGUETTES
* BAGELS – SAVOURY & SWEET
* DINNER ROLLS
* FLATBREADS
* FRUIT BREADS
* SPECIALTY BREADS
* FOCCACIA SLABS
* PASTRY AND CAKE MIXES
* Mix, mould and shape pastry dough and operate dough brake equipment
* Control mixing times and transfer dough to tempering rooms
* Control baking times and monitor the temperature and appearance of products.
* Empty, clean and grease baking trays, tins and other cooking equipment
* Cleaning and restocking workstations and ensuring that all equipment is sanitized and prepared for the next shift.
* Weighing and measuring ingredients for the preparation of baked goods
* Kneading dough by hand or using industrial dough mixers
* Forming loaves to the desired shape
* Baking items in oven (electric, gas or wood-fired)
* Monitoring oven temperature, humidity and baking times
* Removing baked bread from oven
* Ordering and purchasing raw materials
* Complying with food hygiene and safety requirement
