We are seeking an experienced Chef Supervisor at Northern Heritage Motel, Cairns, for a hands‐on leadership role in a structured Defence environment.
Responsibilities
* Lead and support a kitchen team to deliver high‐quality daily meals and functions.
* Oversee catering operations, including food safety, stock control, and compliance with OH&S and HACCP standards.
* Manage menu execution, food forecasting, ordering, and waste minimisation.
* Ensure strong allergen management and compliance with dietary requirements.
Requirements
* Certificate III in Commercial Cookery (minimum).
* Proven experience in a Head Chef or Chef Supervisor role within a high‐volume or structured environment.
* A confident, calm leader with experience training and developing teams.
* Strong knowledge of HACCP, food safety, and allergen management.
* Well organised, proactive, and capable of managing competing priorities.
