The Opportunity
This role has become available as a result of the growth the business is experiencing, and with further expansion planned, the pace shows no sign of slowing.
As Operations Director, you will provide strategic leadership across all Front of House operations, overseeing the Group Bars Manager and Group Sommelier to deliver excellence in people, product, and service across all venues. While the title reflects the full breadth of the F&B remit, the focus is firmly on the guest‐facing side of the business, the culture on the floor, the quality of service, and the strength of the beverage and wine programs.
You will work closely and collaboratively with the Culinary Director and Head Chefs across the group, ensuring food and beverage feel cohesive, considered, and aligned to each venue's identity. You will also partner with Head Office departments, including People & Culture, Finance, Marketing and Operations to ensure the Front of House division is well‐supported and performing at the highest level.
From the progressive, produce‐driven dining of NOMAD to the heritage grandeur of Reine & La Rue and the storied elegance of Florentino's multiple spaces, no two venues are the same. This role requires a leader who can hold a group‐wide perspective while honouring the distinct identity of each brand, and with Privé on the horizon and further growth to come, it is an especially exciting moment to join the business.
This role can be based in either Sydney or Melbourne, with regular travel between states as part of the position.
Key Responsibilities
As a member of the edition Leadership Team, you will contribute to strategic planning, business development, and company‐wide decision‐making while providing visionary leadership to your direct reports. You will support their growth through development plans, structured reviews, and ongoing coaching, building a strong pipeline of future leaders across the group.
Commercially, you will partner with the Director Commercial Performance to set and deliver against group‐wide financial targets. You will guide product development across service, beverage, and wine, and work with the Culinary Director on menu direction and the integration of food and beverage across all venues. You will also collaborate with the Marketing Department on a calendar of activations and events, and provide strategic leadership through new venue openings.
Our Ideal Candidate
You will bring significant senior leadership experience from premium, fast‐paced, and elevated dining environments. You have a proven track record of driving commercial performance without compromising on guest experience, and the ability to lead and develop high‐performing teams across multiple departments and locations.
Deep knowledge of Front of House, Beverage, and Wine is essential, as is strong financial acumen and the ability to build collaborative relationships across a complex organisation. You are equally comfortable thinking at a group level and being present on the floor, and you know how to hold a clear perspective across a diverse, multi‐brand portfolio while respecting the individual character of each venue.
