Overview
Island State Brewing operates three venues across the North West of Tasmania. We are seeking a chef skilled in pizza making and char grilling, with experience in high‐end, well‐presented pub food.
Duration: Minimum 3‐year commitment
Job type: Full‐time (minimum 38 hours per week)
Salary: $77,000–$80,000 per year

Responsibilities
* Collaborate with the manager and Head Chef to plan menus, develop recipes, estimate food and labour costs, and determine daily production schedules.
* Inspect stock and supplies to maintain quality and freshness, including rotating foodstuffs and discarding out‐of‐date items.
* Supervise kitchen staff and coordinate activities to ensure timely, quality food preparation and appealing plate presentation.
* Train, mentor and evaluate cooks and kitchen workers, demonstrating techniques and advising on cooking procedures.
* Inspect equipment and work areas for cleanliness and functionality, and set up the kitchen with necessary utensils.
* Control waste, monitor special dietary requirements, and maintain occupational health and safety procedures.
* Communicate with manager, Head Chef, dietitians, kitchen and waiting staff about food preparation and quality issues.
* Prepare and cook food in a timely manner, including handling special dietary foods.
* Meet with customers to discuss menus for special occasions such as weddings, parties, and banquets.
* Manage the kitchen account and roaster, and supervise cleaning of kitchen and dining areas while maintaining sanitation records.
Qualifications
* Diploma level qualifications or equivalent in Hospitality or related field.
* At least one year of recent relevant experience as a chef or cook within the last five years.
* Valid driver licence and reliable vehicle.
* Ability to work independently and lead a small team.
* Strong problem‐solving and diagnostics skills.
* Clear oral communication skills.
* Flexibility to work weekends and varying hours.
