About the Role
As Senior Sommelier, you will:
* Curate and manage an innovative wine list for Lito and Haven, focusing on premium Australian and international producers.
* Train, mentor, and inspire a growing team of beverage professionals.
* Deliver exceptional tableside service, including pairings, recommendations, and bespoke experiences for high-profile guests.
* Oversee inventory, supplier relationships, cost control, and cellar management across both venues.
* Collaborate with the culinary teams to design seasonal tasting menus and pairing programs.
About You
You are a polished, confident wine professional with:
* Proven experience as a senior sommelier within luxury hotels.
* Certified wine qualifications (e.g., WSET Level 3 or Diploma, Court of Master Sommeliers).
* Exceptional service standards, deep product knowledge, and an instinct for hospitality.
* Strong leadership skills and a passion for developing talent.
