Named after the seven-metre-tall cast-iron sculpture Laura by Jaume Plensa that gazes into the dining room, Laura offers an intimate 40-seat experience that celebrates the art of unhurried dining. Each dish reflects our commitment to the finest ingredients, thoughtful craftsmanship, and a guest journey as authentic and inspiring as our coastal surrounds. Laura frequently incorporates produce from the estate's kitchen garden, which emphasizes seasonal and fresh ingredients and is proud to be one of only two Relais & Châteaux appointments in Australia.
Under the guidance of Culinary Director Josep Espuga - originally from Catalonia, Spain, with experience at acclaimed establishments including Mugaritz, Nahm, and New York's Degustation - Laura has become synonymous with precision, creativity, and excellence.
We are seeking a Sous Chef to join our award-winning team. This is an exceptional opportunity for a culinary professional eager to refine their craft in a Two-Hatted environment and play a key leadership role in one of Australia's most distinguished regional restaurants.

About the Role
Full-time, permanent position with a rotating roster
38-hour working week across five days, with overtime and additional benefits
Competitive remuneration and excellent working conditions
Work alongside and support the Culinary Director in leading a Two-Hatted kitchen
Collaborate with a passionate team to execute refined, produce-driven dishes

About You
To be successful in this role, you will have :
* Certificate IV in Commercial Cookery (or equivalent)
* Minimum 3–4 years' experience in a comparable fine-dining environment
* Strong leadership and communication skills, with the ability to mentor and inspire others
* A deep respect for seasonal produce and a commitment to sustainability
* A proactive, organised, and collaborative work ethic
* The ability to thrive in a high-performance, detail-oriented kitchen
* Flexibility to work weekends and public holidays
* A current Victorian driver's licence and reliable transport
