The Casual Chef – Level 4 is a skilled and experienced culinary professional responsible for preparing and cooking high-quality dishes in accordance with CU29's premium dining standards. Working across various kitchen sections, this role requires strong technical cooking skills, the ability to work independently, and the flexibility to adapt to different service requirements.
This position aligns with the Hospitality Industry (General) Award 2020 – Level 4 classification, recognizing the ability to work without direct supervision and undertake complex cooking tasks.
Key Responsibilities
Food Preparation & Cooking
Prepare, cook, and present menu items to CU29's quality and presentation standards.
Work across grill, sauté, oven, and cold sections as required.
Ensure accurate portion control and consistency in every dish served.
Section & Service Management
Set up and maintain assigned kitchen section for service, including mise en place.
Manage orders and service flow in a timely and efficient manner.
Train and guide junior kitchen staff where required.
Quality & Compliance
Maintain high food safety and hygiene standards in accordance with HACCP and local health regulations.
Correctly store, label, and rotate all food items to minimize waste.
Ensure compliance with CU29's operational procedures and WHS requirements.
Work closely with the Head Chef and Sous Chef to ensure menu execution meets guest expectations.
Support other kitchen sections during peak times or staff shortages.
Participate in team briefings and contribute to menu development ideas.

Qualifications & Experience
Certificate III in Commercial Cookery (essential).
Minimum 2 years' experience in a commercial kitchen, preferably in a premium or fine dining environment.
Sound understanding of food safety requirements and WHS standards.
Availability to work flexible hours, including nights, weekends, and public holidays.
