What You'll Be Doing:
* Mixing and managing dough with care—hydration, yeast, rest times, and fermentation all matter here
* Proofing with precision, keeping an eye on temp, timing, and texture
* Portioning and balling dough consistently, ready for service
* Stretching by hand to maintain structure and achieve that perfect crust—light, blistered, never overworked
* Keeping your section sharp, clean, and ready—from prep to pack down
* Working closely with a supportive team to deliver smooth, high-quality service
* Contributing to a culture of calm professionalism and mutual respect
What We're Looking For:
* Experience working with pizza in a quality-driven, fast-paced kitchen
* Strong knowledge of dough lifecycle—fermentation, proofing, and peak performance
* A disciplined, detail-focused approach to prep and service
