Job Summary

La Cucina Beaumaris is seeking an experienced and skilled Chef de Partie to join our culinary team. The successful candidate will be responsible for overseeing a specific section of the kitchen, ensuring the quality, consistency and presentation of dishes, and supporting junior kitchen staff.

As a family‐run Italian eatery in the heart of Bayside, LaCucina focuses on authentic Italian cuisine, fresh ingredients, homemade pasta, risottos, wood‐fired pizza, and dishes inspired by Southern Italian flavours. The role requires a chef who can work confidently in a busy restaurant environment while maintaining the warm, high‐quality dining experience expected by our guests.

Key Responsibilities

* Oversee a specific section of the kitchen, including grill, sauté, pasta, pizza, or dessert preparation.
* Assist with the preparation and execution of Italian menu items, including fresh pasta, risotto, wood‐fired pizza, antipasti, mains, and desserts.
* Assist with planning menus, estimating food and labour costs, and ordering food supplies in line with restaurant requirements.
* Monitor the quality of dishes at all stages of preparation, cooking, and presentation.
* Discuss food preparation and service issues with managers, kitchen staff, and waiting staff to ensure smooth restaurant operations.
* Demonstrate cooking techniques and advise junior kitchen staff on correct preparation and cooking procedures.
* Assist with selecting and training kitchen staff when required.
* Freeze, store, and preserve food items where required, in accordance with food safety standards.
* Ensure the highest quality, consistency, and presentation of food products.
* Operate and maintain kitchen equipment, including ovens, stovetops, wood‐fired pizza oven, knives, and other kitchen tools.
* Monitor and control food costs within your section.
* Train and manage junior kitchen staff, including delegating tasks and monitoring performance.
* Collaborate with the executive chef and sous chef to develop and refine menu items in line with LaCucina's Italian dining style.
* Monitor inventory levels and assist with ordering supplies and fresh ingredients.
* Follow health and safety regulations, including proper food handling and storage procedures.
* Maintain a clean, organised, and efficient kitchen environment.
* Participate in menu planning and development, including seasonal dishes, functions, and catering menus.
* Work efficiently in a fast‐paced kitchen environment, including regular restaurant service, takeaway, functions, and catering preparation.

Requirements

* Previous experience as a Chef de Partie or line cook in a restaurant.
* Solid knowledge of culinary techniques and ingredients.
* Experience or strong interest in Italian cuisine, including pasta, risotto, pizza, sauces, seafood, meat, and traditional flavour profiles.
* In‐depth knowledge of a specific section of the kitchen, including techniques, ingredients, and equipment.
* Proven leadership skills and ability to manage junior kitchen staff.
* Ability to work efficiently in a fast‐paced restaurant environment.
* Strong attention to detail, cleanliness, and food presentation.
* Flexibility to work in different areas of the kitchen as needed.
* Ability to manage, support, and train junior kitchen staff.
* Strong communication and interpersonal skills.
