The Role
We're seeking a full time Chef who can take ownership of our kitchen and help elevate our food offering while ensuring service consistency across busy periods. Key responsibilities:
· Preparing and cooking dishes from our menu: from classic pub mains to more refined plates, and lighter options for lunchtime or casual dining.
· Ensuring presentation, portion size and taste meet the venue's standards during high volume service.
· Contributing to seasonal menu updates: developing specials that reflect coastal dining, local produce and the feel of our venue.
· Managing food prep, mise en place and section responsibilities in a team kitchen.
· Overseeing stock levels, assisting with ordering and monitoring food cost and waste.
· Maintaining high levels of cleanliness, organisation and food safety in the kitchen—ensuring all sections meet regulatory standards.
· Working with the kitchen team to train or mentor junior cooks, delegate tasks, and ensure smooth hand-over between shifts.
· Operating on a rotating roster—covering lunches, dinners, weekends and busy holiday periods as required.
· Supporting front-of-house by ensuring smooth dish delivery, being aware of service flow and adapting when things get busy.
What We're Looking For
We're after a Chef who is reliable, enthusiastic and able to perform under pressure. The successful candidate will ideally have:
· Minimum 2 years' experience in a similar role—ideally within a high volume pub, bistro or beachside venue.
· Demonstrated strong cooking skills: able to execute classic mains, lighter dishes and seasonal specials with quality.
· Good knowledge of food safety, hygiene and kitchen operations.
· Experience working on rotating shifts including nights and weekends, and managing busy service periods.
· A team player mindset: good communication, positive attitude, flexibility and willingness to step up.
· A proactive approach: identifying improvements in menu, workflow or presentation and bringing ideas.
· A commitment to maintaining the standard of the cooking, while working efficiently and achieving consistency.
