About Us
Gemcole Pty Ltd is seeking a full-time Sous Chef to join our team at the Cessnock Hotel (formerly The Cambridge Hotel). We operate a bar, bistro, gaming facilities, and accommodation seven days a week, with peak periods on weekends, major Hunter Valley events, and school holidays.
* Dining : Bistro open 7 days, serving pub classics such as steaks, schnitzels, and seasonal menu items.
* Accommodation : Refurbished, air‑conditioned rooms with shared amenities and continental breakfast included.
* Entertainment : Bar with pool tables and dartboards.
We pride ourselves on delivering high-quality meals to locals, mine workers, and visitors. Due to business growth, we are seeking a skilled and motivated Sous Chef to join our professional kitchen team.
Position Overview
The Sous Chef will work closely with the Head Chef, and senior kitchen staff to oversee daily operations, maintain food quality, and support kitchen leadership. The ideal candidate will have strong technical cooking skills, time management ability, and experience in high‑volume service environments.
Key Responsibilities
* Assist with food preparation, cooking, and service according to menu standards.
* Support the Head Chef in menu planning, development, and execution.
* Prepare and present dishes to a high standard in a timely manner.
* Supervise, train, and mentor junior kitchen staff.
* Ensure compliance with HACCP, WHS, and food safety regulations.
* Manage stock ordering, inventory, waste control, and rotation.
* Lead kitchen operations during peak service and in the absence of senior chefs.
Qualifications & Experience
* Certificate IV in Commercial Cookery and Diploma in Hospitality Management.
* Minimum 2 years' experience as a chef in a commercial kitchen.
* Experience in an Australian pub, hotel, or casual dining venue (desirable).
* Ability to work efficiently in a fast‑paced, high‑volume kitchen.
* Strong communication, teamwork, and leadership skills.
* Ability to work a rotating roster, including weekends, nights, and public holidays.
Salary & Benefits
* $80,000–$82,000 per annum + superannuation.
