Melaleuka Farm Merchants has a unique opportunity for a Head Butcher.
Our philosophy is to provide a true farm-to-table experience for our customers in our hospitality venues, off-site (e.g. Farmers Markets) and online retail.
Our butchery is based in Byford, just down the road from our farm in North Dandalup. Our cattle breeding program is centred around our Akaushi (Red Wagyu) herd which allows us to produce high quality, marbled beef from both grain-finished and grass-fed cattle with superior, consistent flavour.
As our Head Butcher, you will be responsible for overseeing the process from our farm to table philosophy, and collaborating closely with our farm, butchers, suppliers and chefs to ensure only the best
**The Role**:
- Minimise product wastage through effective management;
- Comprehensive understanding of hygiene and food safety practices & HACCP;
- Demonstrated proficiency in using meat production tools safely;
- Developing new and innovative value add range to excite customers;
- Strong communication and customer service skills;
- Team-oriented mindset with a willingness to support colleagues and contribute to a safe and happy work environment;
- Ensure the highest standards of meat preparation, trimming, cutting, mincing, portioning and packing for orders and display;
- Developing a dedicated team of skilled butchers and provide training as needed;
- Experience in supervision or management in a food retail environment;
- Understanding of budgeting, stocktaking and negotiating with suppliers;
- IT experience is desirable.
