About The Role
We currently have an exciting opportunity for an experienced Sous Chef to join our team. Working closely with the Head Chef, the Sous Chef plays a pivotal role in leading and supporting the kitchen team to deliver an outstanding dining experience. Our vision is to establish Seagulls as a premier dining destination in the Northern Rivers, and we are looking for someone who shares our ambition. As part of a collaborative and innovative culinary team, you will contribute fresh ideas and drive excellence, ensuring we consistently exceed our guest\'s expectations. Key Responsibilities
Operational Support
* Assists the Head Chef in daily kitchen activities
* In charge in the absence of the Head Chef
* Coordinate kitchen activities during service to ensure smooth and timely operations.
Food Preparation & Quality Control
* Develops ordering & prep lists
* Supervise food preparation to maintain consistency in taste, presentation, and quality.
* Ensure all dishes meet the venue's standards before leaving the kitchen.
* Monitor portion sizes and adherence to recipes
Team Supervision
* Train and mentor junior staff, including line cooks and kitchen assistants.
* Handle staff-related issues, such as scheduling, discipline, and performance feedback, in collaboration with the Head Chef.
Hygiene & Safety
* Enforce compliance with food safety and hygiene regulations.
* Ensure cleanliness and maintenance of all kitchen equipment and work spaces.
* Ensure all opening & closing checklists are completed
* Complete ERM end of shift reports
About You
* Proven experience in a fast-paced, high-volume kitchen environment
* Strong understanding of food safety, hygiene standards, and WHS legislation
* Experience in food quality control and consistency
* HACCP accreditation
* Current Food Safety Supervisor Certificate
* Formal Chef trade qualifications
* Passion for producing high-quality, visually appealing dishes
* Availability to work a rotating roster, including evenings, weekends, and public holidays
* Current First Aid, CPR, and Advanced Resuscitation Certificates
