Additionally, contribute to our Conference & Events services, providing exceptional catering for up to 300 delegates, from grand buffets to plated fine dining, ensuring every guest enjoys a memorable experience.
Purpose
As Chef de Partie, you will play a key role in delivering consistent, high-quality food across multiple outlets. Working closely with the wider kitchen brigade, you will contribute to service delivery, team development, and the ongoing evolution of our food offering.
Primary Responsibilities
* Manage your section efficiently across varying service styles and outlets
* Support service across Republic Tavern, Trader Restaurant, and Conference & Events as operationally required
* Take ownership at the pass when required, ensuring quality, consistency, and timely service
* Maintain strong control of food cost, waste management, and labour within your section
* Deliver consistently high-quality, well-presented dishes aligned with brand and venue standards
* Train, mentor, and support junior team members across the kitchen brigade
* Maintain a clean, safe, and compliant kitchen environment with a strong focus on food safety
Skills & Experience
* Previous experience as a Demi Chef or Chef de Partie in a professional kitchen
* Experience working across multiple service styles or high-volume environments highly regarded
* Strong understanding of HACCP, food safety, and compliance standards
* A leadership mindset with a passion for developing junior chefs
* Certificate in Commercial Cookery (required) and Food Safety certification (preferred)
* Strong organisational and time management skills across prep, service, and cost control
* Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
