Position: Chef
Salary: $78,000 to $85,000 per annum plus 12% superannuation

The Royal Sultan Restaurant & Bar is a well-established Indian restaurant in Castlemaine VIC known for delivering authentic, high-quality Indian cuisine, with a strong focus on traditional flavours, consistency, and exceptional dining experiences. As part of our continued growth, we are seeking an experienced and passionate Chef to join our kitchen team and contribute to maintaining and enhancing our culinary standards.
This role is ideal for a skilled culinary professional who thrives in a fast-paced kitchen environment and is confident in delivering high-quality dishes while maintaining efficiency, consistency, and strict food safety standards. The successful candidate will play a key role in ensuring smooth kitchen operations, supporting menu execution, and maintaining the reputation of The Royal Sultan Restaurant & Bar for excellence in Indian cuisine.
Key Responsibilities:
* Prepare, cook, and present a wide variety of authentic Indian dishes including curries, tandoori items, breads, and banquet-style meals
* Oversee food preparation processes to ensure consistency, quality, and presentation standards are maintained at all times
* Contribute to menu planning and assist in developing new dishes that align with customer preferences and seasonal ingredients
* Monitor food stock levels, assist in ordering supplies, and ensure proper storage and rotation of ingredients to reduce waste
* Maintain strict compliance with food safety, hygiene, and workplace health and safety regulations
* Coordinate with kitchen and front-of-house staff to ensure smooth and timely service during busy trading periods
* Supervise and guide junior kitchen staff, providing training on cooking techniques, kitchen procedures, and presentation standards
* Assist in managing food and labour costs while maintaining high-quality output and operational efficiency
* Ensure all food preparation areas, equipment, and utensils are kept clean, organised, and compliant with hygiene standards
* Support quality control by checking dishes at all stages of preparation and ensuring consistency before service
Qualifications:
• Certificate III or IV in Commercial Cookery or equivalent qualification (preferred but not required)
• Minimum 1 year experience as a Chef in a commercial or restaurant kitchen (preferred but not required)
Skills & Requirements:
* Strong knowledge and experience in Indian cuisine (preferred)
* Ability to work effectively under pressure in a fast-paced environment
* Strong understanding of food safety, hygiene, and HACCP principles
* Excellent cooking, preparation, and presentation skills
* Strong teamwork, communication, and leadership abilities
* Ability to multitask and manage kitchen operations efficiently
* Positive attitude, reliability, and strong work ethic
* Flexibility to work evenings, weekends, and public holidays as required
