Hyatt Regency Brisbane, a fast‐paced and dynamic full‐service 5‐star hotel, is seeking an Executive Chef to lead our talented Culinary team and drive excellence across all kitchen operations.

Responsibilities
* You will drive culinary standards specific to our hotel which meet and exceed the expectations of the hotel's guests.
* Seasonal updates of menus across two restaurants and bar outlets, and events, to include breakfast, lunch, dinner, bar snacks and high tea.
* Updates of Event DDP Menus and packages.
* Management of entire F&B budgets & costs including creation of revenue‐driving initiatives such as wine dinners with local suppliers and special dining events.
* Maintaining HACCP standards to ensure continued success of HACCP certification.
* Management of rosters and payroll costs.
* Ordering and stock control, considering at all times local produce and suppliers to support our local community in our company's purpose of care.
* Training and development of all team members, communicating clearly at all times and holding regular meetings with the team to share, inspire and develop.
* In conjunction with Sales & Marketing, plan and execute promotional activities for all F&B outlets, events and promotions.
* Work in partnership with the Food & Beverage Manager to identify ahead of time and respond to market trends, along with a focus on Hyatt's Top 20 fundamentals in F&B.
* Participate and support Hyatt's World of Care pillars across People, Planet and Responsible Sourcing.
Requirements
* Relevant experience in a major group of restaurants and/or 5‐star hotel environment.
* Proven experience in leading and developing others.
* Relevant degree, diploma or certification in cookery.
* HACCP experience highly desirable.
* Unlimited/unrestricted work rights in Australia.
