We are currently seeking a Sous Chef. This role offers a balance of hands‐on preparation of high‐quality dishes and operational responsibility for supervising and directing all kitchen personnel.
In this role, you will be responsible for:
* Utilising the staff and resources available, organise and facilitate the highest possible standards of food service.
* Creates and costs menu items within guidelines established by the Executive Chef whilst keeping in line with current trends.
* Actively promotes specialty dishes based on ingredients and/or season.
* Use local produce where available to create innovative menus.
* Encourage clear communication lines and forums between all personnel.
* Train and mentor line staff including Apprentices and Trainees.
To be successful in this role, you must have:
* Successfully completed a trade qualification in commercial cookery.
* Previous experience in a fine dining, resort/hotel based restaurant.
* Previous experience in a supervisory role, preferably at Sous level.
* Strong interpersonal and communication skills.
* Must have thorough knowledge of security, health and safety requirements in a commercial kitchen environment.
