Lead the kitchen at Wally's Albert Park. Senior Head Chef role leading service, menu development, team culture and kitchen operations in a quality‐focused neighbourhood venue with competitive salary, generous weekly tips, and genuine work/life balance.
Responsibilities
You're a calm, capable leader who leads from the pass and sets the standard for every service. You know how to run a disciplined, efficient kitchen while building a strong team culture grounded in consistency, accountability, and respect.
You bring a strong operational mindset, sharp eye for detail and a genuine understanding of produce‐led, thoughtful cooking. You're equally comfortable leading a busy service, developing seasonal menus, managing costs, and mentoring a team to perform at a high level.
Qualifications
* Proven experience as a Head Chef or a highly capable Senior Sous Chef ready to step into a leadership role
* Strong leadership and people management skills, with the ability to build, mentor, and retain a high‐performing kitchen team
* Demonstrated experience managing all aspects of kitchen operations, including service standards, prep systems, rostering, and workflow
* Strong menu development and food costing experience
* Sound understanding of labour management, stock control, supplier relationships, and COGS
* A thoughtful approach to seasonal, produce‐driven cooking aligned with Wally's style
* The ability to remain composed and decisive during high‐pressure service
* Excellent organisational and communication skills, hands‐on approach and strong attention to detail
* A commitment to maintaining high standards of cleanliness, food safety, and operational compliance
* Relevant trade qualifications and current food safety certification

What You'll Bring
