Purpose of the Position
The Head Cook position is employed to create, prepare, and cook meal provisions for Batchelor Institute's Batchelor Campus kitchen which provides breakfast, lunch and dinner to students residing on campus for the duration of a workshop and catered lunch meals for staff.
Duties
* Create, prepare, and cook balanced, nutritious, home-style meals, whilst ensuring variety in daily and weekly meals.
* Plan and implement weekly menus, following Australian Dietary Guidelines and other guidelines as per Australian Health initiatives and recommendations.
* Support the Team Leader, Kitchen Services to ensure the Kitchen meets and maintains national food safety standards and regulation requirements including food safety practices and general requirements, food safety management tools and food premises and equipment.
* Prepare order lists to support the provisions required for planned weekly menus.
* Prepare pre-packed meals for students who arrive, depart and/or participate in local field trips outside of normal kitchen operating hours.
* Instruct, mentor, supervise, and provide guidance to kitchen hand staff.
* Maintain kitchen utensils and cooking equipment.
* Ensure the kitchen, dining room and food storage areas are kept clean and tidy.
* Supervise stocktake activities and disposal of perishable foods.
* Ensure responsiveness to dietary requirements can be fulfilled within a short time frame.
* Undertake other duties within the range of skills associated with this classification as directed by the line manager.
Licences and Certification Requirements
* Applicants must have an Ochre Card and a current Police Check and/or ability to obtain these prior to commencement.
* Current First Aid Certificate, or ability to obtain and maintain one.
* Food handling supervisor certificate, or ability to obtain and maintain one.
Selection Criteria
* Certificate III or higher in a relevant discipline and/or working towards completion of, or relevant experience in a similar role.
* Demonstrated ability to work effectively in culturally diverse teams within the social, political, and cultural environments of Aboriginal and Torres Strait Islander families, communities, and organisations.
* Highly effective interpersonal skills including proficient oral communication which can be adapted to meet the needs of people from all educational levels.
* Demonstrated capability in the understanding and interpretation of procedures that relate to Commonwealth/State legislation and guidelines.
* Demonstrated capability in participating in a diverse team to obtain outcomes of success.
* Ability to demonstrate meeting multiple and conflicting deadlines and work autonomously.
* Understanding of Work, Health and Safety, Equity and Anti-discrimination principles and practices, and ability to comply with Institute WHS Policies and Procedures.
