Rustica Brighton is seeking a dedicated, experienced Cook to join our kitchen team as a full‐time position. Salary is $76,600.

Duties and Responsibilities

* Plan, organize, and coordinate daily food preparation and cooking activities to support efficient kitchen operations and timely service.
* Prepare, cook, and present a variety of dishes in line with menu requirements, recipes, and customer orders.
* Portion, season, and cook food using various methods including grilling, frying, roasting, baking, steaming, and sautéing.
* Assist with menu planning and contribute ideas for recipes, specials, and food presentation.
* Monitor food quality during preparation and service to ensure consistency, freshness, and presentation standards.
* Maintain cleanliness and organisation of kitchen workstations, storage areas, and food preparation areas.
* Ensure compliance with food safety, hygiene, and workplace health safety procedures.
* Check stock levels, rotate stock, store ingredients properly, and report ordering requirements.
* Receive, inspect, and store deliveries to ensure quality and freshness standards are met.
* Supervise and guide kitchen assistants or junior staff during preparation and service when required.
* Operate kitchen equipment safely and report any maintenance or repair needs promptly.
* Assist with portion control, proper storage, and waste minimisation to support food cost control.
* Respond promptly to kitchen operational issues to maintain a smooth workflow during busy service periods.
* Perform other duties consistent with the role of Cook.

Skills and Qualifications

* Minimum 1 year of full‐time relevant experience as a Cook in a commercial kitchen or similar hospitality environment.
* Certificate III in Commercial Cookery or a higher relevant qualification in Culinary Arts or Kitchen Management.
* Sound knowledge of food preparation techniques, cooking methods, and kitchen operations.
* Strong understanding of food hygiene standards, food safety regulations, and workplace health safety (WHS) requirements.
* Proven ability to work efficiently in a fast‐paced kitchen environment while maintaining quality and consistency.
* Well‐developed skills in food preparation, presentation, portion control, and maintaining recipe standards.
* Strong organisational and time‐management skills with the ability to prioritise tasks and meet service deadlines.
* Effective communication and teamwork skills to coordinate smoothly with kitchen and front‐of‐house staff.
* Ability to maintain high standards of cleanliness, safety, and performance while working under pressure and managing multiple tasks.
