Lead Food and Beverage Operations in Paradise

As a senior hospitality leader, you'll oversee a diverse portfolio of restaurants, bars, and catering operations across this world-class resort. This role combines strategic vision with hands-on operational excellence, driving innovation, profitability, and unforgettable guest experiences.
Your Role
* Provide strategic leadership and operational oversight for your assigned portfolio of venues.
* Work closely with the General Manager – Food & Beverage and the wider executive team to ensure every dining experience reflects excellence, innovation, and the essence of the Hamilton Island brand.
* Lead, mentor, and inspire a multi-venue food and beverage team to deliver world-class guest experiences.
* Identify and implement innovative dining concepts, menus, and beverage programs.
* Oversee the financial performance of multiple venues, including budgets, forecasting, and cost control.
* Drive compliance with food safety, liquor licensing, and workplace health and safety standards.
* Partner with Sales and Marketing to create and promote unique culinary experiences and events.
* Foster strategic supplier partnerships that enhance quality and sustainability.
* Lead refurbishment and capital improvement projects to ensure operational excellence.
* Champion a guest-first culture that reflects Hamilton Island's values and service philosophy.
Requirements
* Minimum 8–10 years' senior management experience in multi-venue F&B operations (luxury resort or premium hospitality group preferred).
* Bachelor's degree in Hospitality, Business Management, or related field.
* Proven success in financial management, including P&L performance, budgeting, and forecasting.
* Strong understanding of Queensland liquor, food, and gaming regulations.
* Experience driving service excellence and embedding a guest-first culture.
* Exceptional leadership, communication, and stakeholder management skills.
* Demonstrated ability to lead change and drive innovation.
* Experience managing refurbishments or capital works projects.
* Advanced proficiency in Microsoft Office Suite.
