Work alongside Grant Smillie and Marmont Exec Chef to shape the next chapter of one of Melbourne's most iconic hospitality venues.The Prince Hotel is seeking an experienced, ambitious, and passionate Head Chef to lead the culinary operations of our landmark St Kilda venue.This is a rare opportunity to join a leadership team that includes renowned hospitality entrepreneur Grant Smillie and his Exec Chef, with the chance to influence and develop multiple food concepts across a diverse and evolving operation.We're looking for a chef who thrives on leadership, enjoys building high-performing teams, and has the experience to successfully manage complex, multi-faceted kitchen operations.The OpportunityAs Head Chef, you will take ownership of all Back of House operations while working closely with the director and Exec Chef to elevate the food offering across the venue.Your responsibilities will span:Functions and weddingsPub diningBar food offeringsRestaurant operationsFuture premium and potentially hatted dining conceptsYou will have the unique opportunity to recruit, mentor, and develop your own team while helping shape the culinary direction of a venue with a rich history and exciting future.Key ResponsibilitiesMenu development and innovationFood production and quality controlLeadership and management of all BOH operationsRecruitment, training, and development of kitchen staffDriving team productivity, culture, and moralePurchasing, supplier relationships, and stock controlCost management and operational efficiencyHygiene, food safety, and compliance managementAbout YouYou will bring:Minimum 3 years' experience as a Head Chef within a medium-to-large hospitality operationStrong understanding of managing multi-level food operationsExceptional leadership and communication skillsBroad culinary knowledge and a genuine passion for foodThe ability to balance creativity with operational excellenceA hands-on leadership style and strong attention to detailWhat We OfferSalary package of $110,000–$130,000 per annumSignificant creative input and influence over menu developmentThe ability to build and lead your own kitchen brigadeSupport from an experienced and highly hands-on Executive ChefExposure to a wide variety of dining formats and eventsA role within one of Melbourne's most respected hospitality institutionsGenuine long-term career growth opportunitiesIf you're ready to lead a dynamic kitchen operation and help create the next chapter of The Prince Hotel's culinary story, we'd love to hear from you.
