At Hai Hai Ramen, our foundation is an "unhealthy obsession with Japan's favourite noodle soup". We respect tradition, without being bound by it, which allows us to deliver a modern Ramen & Izakaya experience that customers rave about.

We're looking for an experienced and passionate Head Chef to lead our kitchen, uphold our exacting standards, and drive culinary innovation as we shift into a growth stage for the business in West End, Paddington & beyond.

We have built a reputation as a "cult-fave" ramen brand in Brisbane by blending authentic techniques with creative, non-traditional twists. With the recent opening of our new flagship store in West End, we have a "creative testing ground" and a larger kitchen ready for a true culinary leader.

This is more than a chef position; it's a chance to become the driving force behind the quality and creativity of a brand with serious ambitions to scale.

Your Role & Responsibilities:

* Champion of Quality: You will take ownership of our culinary standards. Your primary mission will be to ensure every dish, especially our 24-hour tonkotsu meets an impeccable standards.
* Kitchen Leadership: You will run the kitchen at our flagship West End location, implementing our training and management systems to build a highly skilled and passionate team.
* Creative Innovator: You will have the freedom to experiment with specials on a regular basis. We want you to think outside the box, developing non-traditional specials and expanding our menu of izakaya-style dishes, inventive ramen options and driving profitability.
* Process & Scalability: You will be instrumental in developing systems and recipes that are both excellent and replicable, preparing the brand for future expansion.

What We're Looking For:

* A Seasoned Professional: You have significant experience running a high-standard ramen kitchen. You are a master of your craft, from broth to tare AND you know how to manage your COGs and Wages effectively while doing so.
* An Unwavering Commitment to Quality: You have a proven track record of upholding the highest standards of food quality and kitchen management, even under pressure.
* A Creative but Disciplined Mind: You have a passion for innovation and are excited by the opportunity to develop new dishes, particularly within an izakaya-style menu.
* A Natural Leader & Mentor: You excel at training and developing kitchen staff and are passionate about building a strong, capable team. You possess both a high level of skill and passion.
* A Growth-Minded Chef: You want to demonstrate your business acumen along with your culinary skills, with the ability to move into an Executive role as our brand expands.
