Job Title

Specialty Chef


About the Role

We are seeking an experienced Specialty Chef to join our team. The successful candidate will be responsible for leading a team of chefs in the preparation and presentation of high-quality dishes.


Key Responsibilities

* Plan and coordinate the activities of the team to ensure operational effectiveness.
* Maintain par stock levels by calculating inventory, ordering, and retrieving supplies.
* Contribute to achieving objectives set within the culinary department.
* Manage the team to ensure proper use of equipment and efficient completion of tasks.
* Monitor grooming and personal hygiene of the team to maintain standards.
* Ensure team members are trained on all safety provisions.


Financial Management

Analyze food costs and determine cost-effective recipes while maintaining standards.

* Identify optimal use of resources and educate the team on the same.
* Monitor operations to minimize food wastage.


Operational Management

Prepare dishes according to recipes and quantities.

* Ensure the section is clean and tidy at all times.
* Closely communicate with Restaurant Manager & Assistant Manager on special functions, booking, menu item availability, service problems, guest comments, and preferences.
* Prevent the use of contaminated products in food preparation.
* Monitor food presentation to comply with company standards and guidelines.
* Provide training and guidance to Commis chefs.
* Communicate anticipated shortages to the Executive chef.
* Attend to day-to-day problems and needs concerning equipment and food supplies.
* Coordinate operations with Department Associates, Team Leaders, and other Departmental Managers.
* Monitor quantity and quality of food products to ensure compliance with standards.


Hygiene / Personal Safety / Environment

Maintain a clean and safe work environment.

* Respect HACCP regulations.
* Follow safety guidelines for equipment.
* Apply hotel security regulations.
* Implement environmental initiatives.


Qualifications

The ideal candidate will possess:

* Primary school education.
* Additional certification(s) from a reputable Culinary school (advantageous).
* Minimum 2 years of relevant experience in a similar capacity.
* Good reading, writing, and oral proficiency in English language.
* Ability to speak other languages (advantageous).
