Salt & Chilli is a popular restaurant in Launceston, Tasmania.We are looking for an experienced South Indian Chef to join our team full-time on a permanent basis. The ideal candidate should be skilled in all types of Biryanis, Dosa, and Idli, and confident in running a busy kitchen.
Your Role
* Prepare authentic South Indian food, especially chicken, goat/mutton, and vegetable biryanis
* Make high-quality Dosas, Idlis, Vadas, Sambar, chutneys, rasam, and curries
* Manage daily kitchen operations from preparation to service
* Create daily specials and festival menus
* Train and supervise kitchen staff
* Handle food preparation, marination, spice mixes, and gravies
* Manage stock, reduce waste, and control food costs
* Maintain high standards of hygiene and food safety
* Work closely with front-of-house staff for smooth service
* Adapt dishes for customer needs (vegetarian, vegan, etc.)
Skills & Experience
* Proven experience as a South Indian Chef
* Strong knowledge of biryani cooking, dosa/idli batter fermentation, and South Indian spices
* At least 3-5 years' experience in a professional kitchen
* Ability to work in a fast-paced environment
* Good leadership and team management skills
* Basic English communication required
Qualifications
* Food Safety Supervisor Certificate (or willingness to obtain)
* Culinary qualification preferred, or strong hands-on experience
