We take pride in delivering delicious food with warm, friendly service — and we are looking for a dedicated Cook to join our kitchen team.
Position OverviewAs a Cook at Marine Hotel Restaurant, you will play an essential role in ensuring high standards of food quality, presentation, and consistency across all menu items. You will work in a busy kitchen environment preparing a range of dishes, from classic comfort meals to seasonal specials, while supporting the head chef and kitchen team to deliver excellent guest experiences.
Key Responsibilities
* Prepare high-quality pub-style meals consistent with the Marine Hotel Restaurant's menu offerings, including classic mains, grills, daily specials, seafood, and house favourites that reflect local tastes and seasonal ingredients.
* Assess food ingredients and prepared dishes to ensure freshness, quality, and presentation before they leave the kitchen, maintaining the restaurant's reputation for consistency and excellence.
* Operate and monitor kitchen equipment such as ovens, grills, fryers, and stovetops, ensuring correct temperature and safe handling to deliver well-cooked, evenly prepared food.
* Cook and season food accurately and creatively, adjusting flavours during cooking to meet quality standards and guest expectations.
* Plate and present meals professionally, adding sauces, garnishes, and accompaniments that match the Marine Hotel's presentation standards and enhance the overall dining experience.
* Manage food storage and stock rotation in temperature-controlled areas, ensuring all perishable items are stored appropriately to maintain food safety and minimise waste.
* Prepare special dietary and guest-specific meals when required, including accommodating allergies, intolerances, or customised orders with attention to detail and care.
* Contribute to menu discussions and planning, offering insights on popular dishes, portion sizes, seasonal ingredients, and estimated food requirements to support menu development and cost-effective ordering.
* Provide guidance and support to kitchen team members, including junior cooks or apprentices, helping them apply consistent cooking practices, kitchen hygiene standards, and operational procedures.
* Maintain high standards of kitchen cleanliness and safety, ensuring all work areas are organised, sanitized, and compliant with food safety, hygiene regulations, and workplace health and safety policies.
* Collaborate with front-of-house staff to ensure timely delivery of meals that match service expectations, particularly during peak dining periods and busy service hours typical of a popular local hotel restaurant.
Qualifications:• Certificate III or IV in Commercial Cookery (Preferred but not required)• Diploma of Hospitality Management (Preferred but not required)
Skills & Requirements:
* Minimum 1 year experience as a Cook or in relevant role
* Proven experience working as a Cook or in a similar kitchen role, preferably in a busy restaurant or pub environment.
* Strong understanding of food preparation techniques, kitchen equipment operation, and portion control.
* Ability to work effectively under pressure and maintain quality during peak service periods.
* Excellent attention to detail, cleanliness, and adherence to food safety standards.
* Good communication skills and the ability to work collaboratively with other kitchen and front-of-house staff.
* Flexibility to work evenings, weekends, and peak trading periods as required.
