**About the Role**
Butchery experience is essential as you will be in charge of butchering, managing the ageing room & dispatching the beef to our Liquid & Larder venues, The Gidley & Bistecca.
Your attention to detail to ensure consistency & quality is essential to this position
**Duties include**
- preparing meat for sale by removing bones, trimming fat and portioning
- selecting and preparing meat to produce smallgoods
- operating machines to cut beef
- organisation of meat ageing room
- train junior staff in butchery techniques
- advising customers on the suitability and uses of cuts of meat
- may assist in menu planning and scheduling, and in estimating food production costs

Pay: $70,000.00 - $85,000.00 per year
