SOUS CHEF – Events

Hamilton Island is seeking a skilled and motivated Sous Chef to join our Conventions & Events culinary team. With over 120+ corporate functions and 450+ weddings held annually, plus major island events, this is your opportunity to step into a leadership role within a high-volume, premium events kitchen delivering exceptional dining experiences at scale.

Your Role

This is a full-time, live-on-island, permanent role reporting to the Head Chef. You'll support culinary operations across weddings, corporate retreats, VIP dinners, masterclasses, and outdoor catering activations. You will play a key role in supervising the brigade, maintaining quality standards, and ensuring seamless service delivery.

Where you'll make an impact
* Lead food prep and service for large-scale and boutique events
* Supervise and mentor junior chefs and kitchen team members
* Assist with menu planning, themed stations, and off-site catering
* Maintain presentation, quality, and hygiene standards
* Ensure compliance with Australian Food Safety Standards
* Support stock control, ordering, and kitchen administration
* Contribute to a positive, professional, and high-performing team culture
What we're looking for

You're a confident and reliable kitchen leader with a flexible, can-do attitude and strong organisational skills. You thrive in dynamic, high-pressure environments and are passionate about delivering outstanding food experiences at scale.

To be successful, you will need:
* Certificate III in Commercial Cookery (Essential)
* Open manual Australian driver licence (Essential)Food Safety Supervisor Certficate (Essential)
* Minimum 4 years post-apprenticeship experience
* Previous experience as a Sous Chef or strong CDP in events/banquets
* Demonstrated leadership in high-volume kitchen environments
* Strong knowledge of food safety, hygiene, and compliance
* Valid Australian working rights
* Professional presentation and attention to detail
* Flexibility to work early mornings, weekends, and major events
