Must be proficient in a la carte Australian cuisine for over 200 people a night. Must be able to relocate to Kyneton (regional Victoria). Must be able to show a strong resume in similar roles. Must be able to cook over 100 steaks a night.

The Shamrock Hotel is the crown jewel of Kyneton, an upmarket tourist town renowned for its charm and vibrant local community. Under new ownership with over 20 years of hospitality expertise, this iconic venue is embarking on an exciting chapter with major renovation and events.

* Bistro: seating for 60 patrons
* Elegant Dining room: intimate space for 25 guests
* Function Room: Accommodating up to 100 attendees
* Beer Garden: Open-air space for 60 patrons
* Sports Bar: A lively hub for locals and visitors alike

As a cornerstone of the community, the Shamrock Hotel is eagerly anticipated to deliver its next evolution of exceptional service and dining experiences.

THE ROLE:

We are seeking a passionate Chef to join our team and play a pivotal role in revitalizing this iconic venue. This is a hands-on position with minimal administration but plenty of creativity. Key responsibilities include:

* Collaborating with a team of 4 full time kitchen staff
* Planning and executing weekly food specials & take home meals to keep our onsite and drive thru menu fresh and exciting
* Overseeing costing and portion control for take home meals
* Ensuring the highest quality of meals using only fresh, locally sourced ingredients

This role demands leadership, organisational excellence and the ability to thrive in a fast-paced environment while maintaining a passion for delivering innovative and exceptional cuisine.

The Team:

Our dedicated team is a blend of full time, part time and casual professionals, many of whom have been with us over a decade. Together, they bring skill, camaraderie and a shared commitment to providing outstanding service.

What We Are Looking For:

* Experience in high volume kitchens
* A proven ability to lead and inspire a team
* A strong understanding of costing, portioning and kitchen management
* A great work ethic and a drive to make a lasting impact

What We Offer:

· 38 hours per week with flexible working hours based on functions and bookings

· $78,000 - $82,000 +Super
