Responsibilities
Produce a range of bread and pastry products utilizing your trade skills and bakery experience
Set-up and monitor production to maximize quality and minimize waste
Ensure production targets are met while always ensuring HACCP quality and safety adherence
Provide leadership in continuous improvement and team effectiveness
Daily baking of bread in line with daily production schedule, following recipes and ensuring consistency with each product
Work with Management on maintaining production schedules, ordering practices and costings for inventory, etc
Report any OHS concerns to management immediately
Mix, knead, rest, roll, cut and shape dough for breads and pastry products
Mix, rest and bake full range of breads
Glaze and dust bread pastries and products as needed
Operate and manage the pastry section of the kitchen to ensure a successful working environment
Prepare ingredients and handle baking and other kitchen equipment
Coordinate the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
Monitor the stock of baking ingredients
Order new supplies, ingredients, and equipment for the pastry section when needed and within budget
Ensure the pastry section adheres to safety and health regulations
Qualifications
Certificate III in Baking or related trade qualification or equivalent is a minimum requirement
Minimum of 2 years of experience as a baker or similar position
