About the Role: Lobby Currumbin is a unique culinary destination transitioning into an expanded service model, including European-inspired evening trade. We are looking for a highly skilled Chef with a deep understanding of European and Scandinavian cuisines to lead our kitchen operations.

Key Requirements & Specific Skills (Mandatory):

* Scandinavian Culinary Expertise: You must have proven experience in authentic Scandinavian breakfast service. Specifically, the ability to prepare traditional Rundstykke and Danish Breakfast sets with precision.
* Specialty Coffee Integration: Strong knowledge of specialty coffee is essential. You must be able to adjust menu flavor profiles to complement current seasonal coffee beans, operate an espresso machine, and perform high-level latte art.
* Operational Independence: Proven ability to manage the kitchen solo during high-pressure shifts, ensuring consistency without supervision.
* Leadership & Management: Minimum of 4 years of commercial kitchen experience, including at least 3 years in high-volume breakfast and 2 years in a leadership/supervisory role.
* Digital Management: Proficiency in using digital tools and spreadsheets for recipe standardisation, inventory, and kitchen organisation.
* Financial Accountability: Advanced skills in Food Costing and Waste Management are strictly required.

Shift Requirements:

* Must be available for early starts (5:30 AM) and have total flexibility to work evening shifts as we expand our trade hours.

Qualifications:

* Certificate III or IV in Commercial Cookery (or equivalent).
* Food Safety Supervisor Certification.
