Located in Mornington on the Mornington Peninsula, we are known for delivering flavour-focused dishes inspired by Asian and contemporary cuisine, prepared using fresh, high-quality ingredients. Operating seven days a week, we provide both dine-in and takeaway services to a diverse clientele of locals and visitors. Our menu showcases a variety of vibrant, well-balanced dishes, and we are committed to maintaining consistency, quality, and efficient service in a fast-paced yet welcoming environment.
This is an excellent opportunity for a qualified culinary professional with strong experience in Asian cuisine and proven leadership capabilities to join a dedicated team and contribute to the ongoing success of a well-regarded hospitality venue. Key Responsibilities:
* Prepare and cook a wide variety of Asian dishes, including stir-fries, soups, and specialty items, using authentic techniques to deliver traditional flavours.
* Design and update menus reflecting Asian cuisine, focusing on fresh ingredients, balanced flavours, presentation, and current food trends.
* Plan menus considering nutrition, seasonal availability, and customer preferences.
* Ensure kitchen and dining areas comply with health regulations and are maintained in a clean and organised condition.
* Manage daily kitchen operations, ensuring timely service and consistent food quality in a fast-paced environment.
* Coordinate with front-of-house and kitchen staff to ensure smooth and efficient service.
* Maintain high standards of cleanliness, hygiene, and food safety at all times.
* Monitor food quality and presentation throughout preparation and service.
* Check incoming supplies for quality and store them in line with food safety and stock control procedures.
* Control costs by managing inventory, estimating food and labour requirements, and minimising waste.
* Cater to customer dietary needs while maintaining quality and presentation standards.
* Collaborate with management to improve menu offerings based on feedback.
* Guide and support kitchen staff by demonstrating advanced cooking techniques.
* Supervise, train, and evaluate staff to ensure adherence to operational standards.
* Reduce food wastage through effective portion control and resource management.
To be successful in this role, it is essential you have:
* Possess a Certificate IV in Commercial Cookery or an equivalent recognised qualification.
* Have a minimum of two years’ experience as a Chef in a fast-paced, professional kitchen, preferably within reputable dining establishments.
* Demonstrate strong leadership skills with the ability to mentor and support team members in a collaborative environment.
* Handle administrative duties, including documentation, reporting, and maintaining operational records.
* Maintain a solid understanding of compliance requirements, including food safety, workplace health and safety, and relevant regulations.
