Renmark Club is seeking an experienced Head Chef to lead a high-volume, multi-concept kitchen in a busy, established award winning venue.
The kitchen operates across:
* Breakfast service (7 days)
* Deck Bites and share-style dining
* All-day meals
* Classic club favorites
* Functions and events
This role suits a Head Chef who understands volume, structure, and consistency, and can confidently lead a diverse, multicultural kitchen team.

About the Role
You will have full responsibility for the day-to-day performance of the kitchen, including food quality, team leadership, cost control, rostering, and compliance. This is a hands-on leadership role in a fast-paced environment.

Key Responsibilities
* Lead all kitchen operations and service periods
* Maintain food quality, consistency, and portion control
* Recruit, train, and manage kitchen staff
* Control food GP, wages, stock, and wastage
* Produce costed rosters aligned with trade
* Ensure HACCP, food safety, WHS, and cleaning standards
* Work closely with front-of-house and functions

What We're Looking For
* Proven Head Chef or Senior Sous experience in a high-volume venue
* Minimum 5+ years of Head Chef or Senior Sous experience in a high-volume environment
* Trade qualified in Commercial Cookery
* Certificate III/IV in Commercial Cookery or equivalent trade qualification is mandatory
* Strong people-management and communication skills
* Experience managing food costs and labour
* Comfortable working across a 7-day roster
