We are seeking an accomplished Baker
Role: This is a hands-on role which includes the following: Overseeing production schedules, quality control, management of a small team, food safety and product development.

**About the Role**
As Baker at Panna Artisan, you will oversee daily bread production in our popular south of the river bakery. We are a retail bakery with a devoted customer base and growing recognition as a bakery of choice for the gluten free community in Perth.
We are also proud to be part of a worldwide community of bakers returning to the tradition of milling flour onsite and producing flavoursome and wholesome breads.
**What We're Looking For**
**Your Tasks Will Include**:
- Managing production, conducting daily quality checks, and maintaining sustainable levels of levains, bread, and dough-related inventory.
- Making recommendations and implementing effective bakery processes.
- Overseeing the production of various doughs and breads, including preparing, mixing, and baking sourdough loaves and specialty breads according to calculated weekly numbers.
- Ensuring cleanliness of equipment and compliance with occupational health and safety regulations prior to production runs.
- Evaluating the quality of raw materials and accurately weighing ingredients.
- Kneading, maturing, cutting, moulding, mixing, and shaping bread and pastry doughs.
- Monitoring oven temperatures and product appearance to determine optimal baking times.
- Coordinating the forming, loading, baking, unloading, de-panning, and cooling of batches of bread and rolls.
- Operating bakery machinery, including mixers and deck ovens.
- Maintaining cleanliness of baking trays, tins, and other cooking equipment.
- Collaborating with other bakery sections (e.g., Pastry team, Front of House, Milling) to share space, ingredients, and labour.
- Using your creativity to develop new recipes while ensuring appropriate pricing.
- Working with the management team to promote and enhance the Panna brand.
- Assisting with the implementation of a regular cleaning and maintenance schedule for all kitchen areas and major equipment.
- Contributing to the creation and maintenance of bakery procedures and policies for hygiene and OHS.
**Job Type**: Casual
Pay: $28.00 per hour
