Semosh, a renowned Mediterranean restaurant in Essendon, Melbourne, is seeking a dedicated and talented chef to join our culinary team. We pride ourselves on providing an authentic dining experience that showcases the rich flavours of the Mediterranean with a focus on Eastern Mediterranean cuisines, predominantly focused on Turkish and Greek traditional dishes. As a cook at Semosh, a renowned Mediterranean restaurant specializing in Turkish and Greek traditional dishes, you will contribute to delivering an authentic Eastern Mediterranean dining experience. Your role will include:
•Examining foodstuffs to ensure quality, especially fresh ingredients integral to traditional Mediterranean and Turkish cuisine such as vegetables, herbs, meats, and dairy products.
•Regulating temperatures of ovens, grills, and other cooking equipment used in the preparation of a wide array of dishes including mezes, grilled meats, slow-cooked stews, and traditional desserts.
•Preparing and cooking food to a high standard, with precision and care, particularly focusing on Mediterranean and Turkish specialties.
•Seasoning food during cooking to authentically reflect the bold and delicate flavours of the region, using traditional spices, herbs, and oils.
•Portioning food, placing it on plates, and adding gravies, sauces and garnishes in line with Semosh's presentation standards, ensuring each dish reflects the restaurant's commitment to quality and cultural authenticity.
•Storing food in temperature-controlled facilities following strict food safety and hygiene standards, essential in maintaining freshness and safety in a busy commercial kitchen.
•Preparing food to meet special dietary requirements, including vegetarian, gluten-free, and allergy-aware adaptations of traditional Mediterranean dishes.
•May plan menus and estimate food requirements, contributing creative input for seasonal or special-event menus that align with Semosh's culinary identity.
•May train other kitchen staff and apprentices, sharing knowledge of Mediterranean techniques, cultural context of dishes, and kitchen workflow in a dynamic, fast-paced setting.

Job Requirements:
Applicants with a Cert III in Commercial Cookery plus 2 years on the job training or Certificate IV in the relevant field, along with a minimum of 1 year experience and knowledge and experience of Mediterranean techniques, cultural context of dishes are encouraged to apply.
