About Us

Bare Witness is a premium brunch and restaurant venue known for high-quality dishes, seasonal produce, and modern Australian cuisine. Our menu is innovative, high volume, and requires consistent culinary execution. We are seeking an experienced Sous Chef to join our leadership team.

About the Role

The Sous Chef will work closely with the Head Chef to manage day-to-day kitchen operations, ensure service standards, and uphold the quality expected of our venue. The role requires advanced cooking skills, strong organisation, and the ability to supervise and train kitchen staff.

Key Responsibilities

* Support the Head Chef in planning, supervising, and coordinating food preparation
* Assist in menu execution, seasonal dish development, and daily service operations
* Train, mentor, and oversee junior kitchen team members
* Maintain high standards of food quality, portioning, plating, and presentation
* Oversee stock control, ordering, and supplier management
* Ensure strict compliance with food safety standards, hygiene practices, and HACCP requirements
* Coordinate workflow, prep schedules, and pass management for efficient service
* Monitor food costs, minimise wastage, and support kitchen cost controls
* Lead the kitchen when the Head Chef is absent

Requirements

* Minimum 3 years full-time experience as a Chef in a commercial kitchen
* Experience in premium brunch, modern Australian cuisine, or high-volume restaurant settings
* Strong technical cooking skills and ability to maintain consistency during busy services
* Demonstrated ability to supervise and train kitchen staff
* Excellent communication, time-management, and organisational skills
* Knowledge of food safety regulations and kitchen compliance
* Formal culinary qualifications (e.g., Certificate III or IV in Commercial Cookery) highly regarded
