The Opportunity
With an unbeatable beachfront address on 75 Mile Beach, K’gari Beach Resort is the hub for four-wheel-driving experiences along Fraser Island's east coast. This remote base is only accessible by 4WD and light plane, igniting a sense of adventure in a relaxed coastal escape.
With expansive grounds, the resort includes newly renovated hotel accommodation, restaurant and bar, plus renowned Eurong Bakery, and the General Store.
Our Head Chef will lead the kitchen team in creating unforgettable culinary experiences at McKenzie's on 75 restaurant and the resort's popular bakery, where guests and travellers alike, indulge in modern Australian cuisine.
Working closely with the General Manager, this hands-on role will plan, develop and execute quality high-volume buffet and a-la-carte service to maintain guest satisfaction rates. Mckenzie's on 75 operates a buffet breakfast, a high-volume buffet lunch and a high quality a 'la carte experience for dinner service. The Eurong Bakery is a bustling outlet and a local favourite amongst visitors to the island. It provides bread, donuts, freshly made sandwiches and a variety of hot food throughout the day.
Key Responsibilities
- Lead, train and manage Chefs, Cooks, Bakers and Kitchen Hands
- Plan and develop menus that considering product availability, seasonality & costings
- Daily analysis of guest feedback & satisfaction metrics, implementing change as required
- Create kitchen work schedules that align with operating forecasts & budgets
- Maintain workplace health and safety procedures, manual handling, chemical handling and company policies & procedures
- Manage effective training and development, certification, performance evaluation, staff rostering and recruitment needs
Essential Skills
- Proven experience in a similar leadership role
- Experience working in a high-volume kitchen
- Certificate III or IV Commercial Cookery
- Diploma Hospitality Management (highly regarded)
- HACCP and Food Safety and Hygiene training
- The right to live and work in Australia
