The Spit - Head Sommelier

Ormeggio at The Spit, located at d'Albora Marina in Mosman, is a buzzy Italian seafood fine-dining restaurant and Cocktail Bar.

It has two chef hats, is often listed among Australia's top restaurants and has an incredible team of skilled people from all over the world in its team.

Ormeggio's wine list has been winning awards since opening in 2009. With a heavy focus on Italian wines, a good splash of French and of course a wonderful cellar of Australian wines this is an established and varied list to engage with.

Ormeggio is dedicated to its wine cellar and is looking for a Head Sommelier who is just as passionate about growing its list, matching great wine with great food and engaging with our guests.

**Essential Requirements**:

- Australian working rights
- Fluent English
- Wine Knowledge
- Current NSW RSA Certificate
- Minimum of two years working in premium dining venues
- Extensive knowledge of food & wine pairings, with a focus on Italian, French and Australian wine varietals
- Completed WSET Level 3
- A positive attitude to customer service and teamwork
- Hours do include weekend & public holiday work.

**Tasks include**:

- Curate and update wine list
- Continuous training and development to ensure current knowledge
- Ongoing training of staff on available wines
- Execute proper wine serving techniques
- Oversee glassware inventory
- Advising customers on wine pairing with food, occasion and working within their budget
- Liaise closely with other restaurant staff, so that you are on hand to take drink orders and serve guests at the appropriate time
- Responsible for briefing other restaurant staff on the wine list, so that they promote particular wines and can advise customers
- Negotiating prices with vendors
- Comply with food safety and hygiene

**What we offer you**:

- Salary $80,000 - $85,000 + Super

**Experience**:

- Sommelier: 1 year (preferred)
- fine dining: 1 year (preferred)

Licence/Certification:

- NSW RSA (required)

- Australia (required)
