Key Responsibilities
Planning, preparing, and cooking a diverse range of Indian dishes, including tandoori items, curries, biryanis, Indian-Chinese dishes, and traditional Indian desserts.
Performing weekly stock checks, managing inventory, and ensuring the efficient use of ingredients.
Preparing and cutting vegetables and meats before service hours to ensure smooth kitchen operations.
Ordering, receiving, and storing stock deliveries as per food safety and hygiene standards.
Operating kitchen equipment such as ovens, grills, tandoors, flat-top grills, and microwaves while following standard cooking procedures.
Ensuring compliance with Health & Safety regulations to maintain a safe and hygienic work environment.
Supervising and mentoring kitchen staff, allocating tasks, and ensuring kitchen operations run efficiently.
Generating employee schedules, managing work assignments, and determining appropriate compensation rates.
Collaborating with managers, dietitians, and kitchen staff to discuss food preparation, menu changes, and dietary requirements.
Producing authentic Indian snacks such as samosas, chaat, and puri.
Preparing sauces, accompaniments, soups, and marinades essential for Indian cuisine.
Ensuring consistency in food presentation, portioning, and taste across all menu items.
Qualifications
Certificate IV in Commercial Cookery or an equivalent minimum qualification.
Proven experience in preparing authentic Indian vegetarian and non-vegetarian cuisine, including tandoori breads and specialty dishes.
Creativity and passion for Indian food with the ability to maintain consistency in quality and presentation.
Strong time-management skills and the ability to work under pressure in a fast-paced environment.
A thorough understanding of OH&S and Food Safety regulations.
High standards of personal presentation and kitchen cleanliness.
Availability to work flexible hours, including days, nights, weekends, split shifts, and public holidays.
