About the Role. At Murugan Idli, based in Woodville Park, SA, we are seeking a highly experienced and creative Head Chef with exceptional expertise in Indo-Chinese, North and South Indian cuisine to lead our busy restaurant kitchen. The ideal candidate will have extensive experience managing high-volume kitchen operations, developing authentic menus that reflect traditional Indo-Chinese flavours, and maintaining consistent quality and presentation across all dishes.
This role requires a strong leader who can manage staff, ensure compliance with food safety standards, and oversee all aspects of menu planning, inventory control, and kitchen performance.
Key Responsibilities
* Lead day-to-day kitchen operations ensuring smooth service across breakfast, lunch, and dinner shifts.
* Develop, design, and implement authentic Indo-Chinese and Indian menus, including special items such as: Chilli Paneer, Gobi Manchurian, Paneer Fried Rice, Chilli Garlic Noodles, Baby Corn Manchurian, and Pepper Fry varieties.
* Supervise, train, and mentor kitchen staff to maintain consistent quality, hygiene, and productivity.
* Manage large-scale catering and buffet events serving up to 1000+ guests, ensuring timely and efficient delivery.
* Plan and execute rostering, stock control, and procurement of fresh ingredients, spices, and specialty items.
* Monitor and maintain quality assurance and food safety standards (HACCP/Food Safety).
* Collaborate with management to create innovative seasonal menus and daily specials to attract new clientele.
* Oversee cost control, minimise wastage, and ensure efficient portion management.
* Conduct staff performance evaluations and continuous training in modern and traditional cooking methods.
* Maintain positive relationships with suppliers and ensure timely supply of high-quality ingredients.
* Liaise directly with patrons and management to ensure customer satisfaction and implement feedback.
Skills & Expertise Required
* Proven mastery in Indo-Chinese, North Indian, and South Indian cuisines.
* Demonstrated ability to prepare signature dishes such as: Chilli Paneer, Paneer Fried Rice, Mushroom Manchurian, Chilli Garlic Noodles, Chilli Gobi, and Pepper Fry dishes.
* Excellent knowledge of food preparation, marination, wok handling, and Indo-Chinese sauces and gravies.
* Strong understanding of tandoor operations and Indian curries.
* Ability to manage a multicultural kitchen team under pressure while maintaining top-tier food quality.
* Experience in menu costing, supplier negotiation, and maintaining budgetary targets.
* Proficient in ensuring food presentation, portion control, and compliance with Australian Food Safety Standards.
* Exceptional communication, leadership, and interpersonal skills.
Qualifications & Experience
* Minimum qualification required equivalent to a Diploma, Advanced Diploma, or associate degree in a related field (e.g., commercial cookery, culinary arts).
* Minimum 5 years' experience as a Head Chef or Executive Chef in Indian or Indo-Chinese restaurants.
* Demonstrated success managing large kitchen teams and high-volume catering operations.
