We're now seeking an experienced and passionate Cellar & Beverage Manager to help bring this landmark venue to life.

About the Opportunity

This is a standout opportunity to take ownership of the beverage program for one of Melbourne's most exciting multi-level hospitality venues.

As Cellar & Beverage Manager, you'll lead the strategy, execution and day-to-day performance of all beverage operations across The Angel - spanning a public bar, restaurant and wine bar and cocktail-led spaces.

Reporting to the Venue Manager and working closely with senior leadership, you'll be responsible for building a distinctive, commercially strong beverage offering that enhances guest experience while delivering margin, consistency and operational excellence.

This is a hands-on leadership role for a beverage professional who thrives in premium, high-volume environments and loves developing teams, systems and standout programs.

What You'll Do

* Lead and manage all beverage operations across the public bar, restaurant/wine bar and cocktail bar, ensuring consistent service standards and product execution.
* Develop, cost and deliver beverage menus across cocktails, wine, beer, spirits and non-alcoholic offerings, aligned to each space and the overall venue concept.
* Drive beverage sales, margin and profitability through smart pricing, menu engineering, promotions and activations.
* Maintain full accountability for beverage COGS, gross margins and beverage-related P&L performance.
* Oversee stock management including ordering, receiving, storage, cellar systems, keg management, stocktakes, wastage and loss prevention.
* Build strong supplier relationships and manage pricing, terms and product selection to support commercial outcomes.
* Analyse sales data and performance trends to identify opportunities for growth and improvement across all floors.
* Recruit, train and develop a high-performing beverage team with exceptional product knowledge and service skills.
* Ensure all beverage operations meet RSA, liquor licensing, WH&S and food safety compliance requirements.
* Collaborate closely with the Head Chef and General Manager on food and beverage pairings, events and venue-wide activations.
* Uphold the integrity of the venue concept at all times, ensuring the beverage program remains aligned with brand standards, direction and intent.

About You

You're a detail-driven, commercially savvy beverage leader who takes pride in running tight systems while delivering memorable guest experiences.

You're just as comfortable in the cellar or behind the bar as you are analysing margins, mentoring staff or planning the next menu refresh.

You'll also bring:

* 4+ years' experience in beverage operations within a premium hospitality environment
* At least 2 years' experience in a senior bar, beverage or cellar management role
* Proven experience managing beverage programs across multiple service styles
* Strong capability in cocktail development, wine curation and beverage costing
* Demonstrated success managing beverage COGS, stock control and cellar systems
* Experience leading, training and retaining skilled beverage teams
* Sound knowledge of RSA, liquor licensing and WH&S compliance
* Strong communication skills and the ability to collaborate with senior leadership
* A hands-on, solutions-focused mindset with high attention to detail
