The Role

We're on the lookout for a Head of Pastry with a deep passion for artisanal techniques and an eye for detail to join our team at Loulou, our vibrant French all-day Bistro, Boulangerie and Traiteur in Lavender Bay and North Sydney.

Working alongside Head Baker Brendon Woodward, you'll play a pivotal role in driving the pastry and viennoiserie offering — with a focus on quality, creativity and consistency. This role calls for a technically skilled and inspiring leader who is confident in sourdoughs, viennoiserie, laminated doughs, and refined pastry work, with the ability to mentor and elevate a team of junior bakers and pastry chefs.


About the Venue

Loulou brings a slice of Europe to Sydney's North Shore, reflecting the elegance of the great contemporary New York and Parisian bistros. With a Boulangerie, Traiteur and Bistro all under one roof, we are a true neighbourhood favourite known for our attention to detail, beautiful presentation and polished yet relaxed service style.

Our commitment to quality, seasonal ingredients, and French technique is at the core of everything we do. From croissants to canelés, mille-feuille to mousse cakes — we're serious about pastry, and we're looking for someone who is too.


What We're Looking For

* Senior pastry professional with advanced technical expertise in classic and contemporary French pâtisserie
* Proven experience in high-volume production kitchens, maintaining consistency and quality under pressure
* Highly skilled in sourdough, viennoiserie, and laminated doughs within premium bakery and restaurant environments
* Collaborative and inspiring leader with a strong ability to mentor, train, and develop junior team members
* Excellent organisational, production planning, and time-management skills
* Creative mindset with a refined eye for detail, aesthetics, and presentation
* Thrives in fast-paced, high-performance environments where precision and excellence are essential
