What You'll Do
* Oversee all kitchen operations, ensuring consistent delivery of high-quality food across banquets and casual dining.
* Champion the use of local produce, celebrating the flavours and ingredients of the Central Mid West region.
* Develop menus that showcase seasonal and regional specialties, building strong relationships with local suppliers and producers.
* Manage budgets and implement cost-control strategies.

* Ensure compliance with hygiene and safety standards.

What We're Looking For
* Extensive culinary knowledge across all kitchen sections, including sauces, cold larder, butchery, and regional cuisine.
* Proven leadership experience in a 4–5 star hotel or similar environment.
* Strong financial acumen with experience in budgeting and cost control.
* Excellent communication and time management skills.
* Ability to thrive under pressure and deliver consistent quality.
* A passion for hospitality and a desire to create memorable guest experiences, with a commitment to local produce and regional identity.
