Our client is seeking a motivated and experienced Junior Sous Chef to join the dynamic kitchen team at the Bennett Hotel in Hamilton, NSW.
The Bennett Hotel, operated by the Ballasalla Discretionary Trust and associated entities, is a well-established, locally owned and operated hospitality venue known for its welcoming atmosphere and high-quality food. With multiple dining areas, including an expansive north-facing beer garden and an intimate dining room, the Bennett caters to a wide range of guests and dining experiences.
This is an exciting opportunity for a chef who is passionate about delivering consistency, creativity, and excellence. The Junior Sous Chef will play a key role in supporting the Sous Chef and Head Chef in the day-to-day running of the kitchen, supervising junior staff, and ensuring the highest standards of food quality and presentation.
Scope of the Role:
Key Responsibilities
* Kitchen Supervision: Oversee daily kitchen operations and manage service in the absence of the Head Chef.
* Menu Planning: Assist in designing and costing menus, ensuring the use of seasonal and high-quality ingredients.
* Staff Management: Train, mentor, and supervise kitchen staff including Commis Chefs, Demi Chefs, and Junior Sous Chefs. Allocate daily tasks and monitor performance standards.
* Quality Control: Maintain consistency in flavour, presentation, portioning, and plating across all dishes.
* Inventory & Ordering: Monitor stock levels, liaise with suppliers, and place orders within budgetary requirements.
* Food Safety & Compliance: Enforce HACCP standards and workplace health and safety obligations.
* Problem Solving: Resolve service issues promptly to maintain smooth operations and uphold kitchen standards.
Level of Authority
* Acts as the deputy to the Head Chef, leading the kitchen team in their absence.
* Holds authority to make operational and staffing decisions when required.
* Accountable for staff performance, food quality, and cost control.
Job Type: Full-time
Pay: $70,000.00 – $80,000.00 per year
