Group Head Chef – Little Mali Tuck shop & The Salty Chook

We're looking for a proven Head Chef and leader to oversee the kitchens at Little Mali and Salty Chook Co.

Little Mali is a well-established coastal café known for fresh breakfast, lunch and taqueria nights, while The Salty Chook is a fast-paced modern chicken shop built around rotisserie chicken, burgers and quality comfort food.

Both venues have strong foundations, established teams and loyal local followings. This role focuses on refining systems, lifting standards and continuing to evolve the food.

This is a great opportunity for an experienced chef ready to step into a leadership role across two successful venues, working closely with ownership to strengthen kitchen operations and inspire the teams.

The Role

You will oversee kitchen operations across both venues, ensuring consistency, quality and strong leadership within the kitchens.

Your responsibilities will include:

• Leading and mentoring kitchen teams
• Maintaining high food quality and consistency
• Ensuring food is cooked correctly and safely every time
• Managing kitchen labour and rostering
• Controlling food cost and reducing waste
• Ordering and supplier management
• Developing weekly specials and seasonal menu improvements
• Improving ingredient cross-utilisation across menus
• Supporting both venues during busy service periods

What We're Looking For
• Proven experience as a Head Chef or Senior Sous Chef
• Strong leadership and team development skills
• Experience running high-volume kitchens
• Solid understanding of food cost and labour management
• Passion for quality ingredients and well-executed food
• Someone who takes pride in teaching and inspiring younger chefs

We're looking for a chef who takes ownership of their kitchens, leads with high standards and inspires their team to consistently deliver great food.

Salary

$90,000 – $100,000 + Super
Performance bonuses available based on venue targets.
