Head Chef – Coral Sea Marina Resort | Airlie Beach, QLD

About the Role

Coral Sea Marina Resort is seeking a highly experienced and passionate Head Chef to lead our culinary operations across the Coral Sea Pavilion Restaurant and Event functions.

Reporting to the Resort General Manager, this hands-on leadership role is responsible for all aspects of food production — from creative menu development to maintaining the highest professional standards of food quality, presentation, and hygiene. The successful candidate will inspire and develop a skilled team, ensure operational efficiency, and deliver exceptional dining experiences for our guests.

Key Responsibilities

* Oversee daily kitchen operations, food preparation, and production for restaurant and event functions.
* Design and implement innovative, seasonal menus aligned with guest preferences and market trends.
* Ensure compliance with all food safety, sanitation, and workplace health and safety standards.
* Manage kitchen budgets, food and labour costs, and conduct regular stocktakes.
* Lead, train, and mentor kitchen team members to achieve high performance and consistency.
* Collaborate closely with the Food & Beverage Manager and Resort General Manager to deliver quality guest experiences.
* Maintain strong supplier relationships to ensure the highest quality produce is sourced.
* Attend management meetings and contribute to overall business improvement initiatives.

Skills & Experience

* Demonstrated experience as a Head Chef or Executive Chef leading a high-performing kitchen team.
* Proven ability to manage budgets, food costs, and labour requirements effectively.
* Strong leadership, communication, and organisational skills.
* Ability to work in a fast-paced environment with a focus on quality and consistency.
* Sound computer literacy and familiarity with stock and scheduling systems.
* A proactive and solution-focused approach with excellent problem-solving skills.

Qualifications

* Certificate III or IV in Commercial Cookery (or equivalent overseas qualification) plus a Diploma, or a minimum of 3 years of relevant experience as a Chef.
* Food Safety Supervisor Certificate.
* Current Senior First Aid Certification.
