We are seeking a Brand Home Manager – St Hugo + Grant Burge to lead our flagship Hugo+Burge Brand Home in the Barossa. This is a senior leadership role within our Brand Homes business, accountable for the strategic, commercial and operational performance of one of Vinarchy’s most important consumer destinations.
About the Role
Reporting to the Precinct Manager – Barossa, the Brand Home Manager has full accountability for the end‑to‑end performance of the St Hugo + Grant Burge Brand Home, leading both Front of House and Back of House (Kitchen) operations.
The role delivers a premium wine and dining experience aligned to the heritage, quality and positioning of both brands, while driving strong commercial outcomes and setting the benchmark for excellence across the Brand Home portfolio.
Key Responsibilities Include
Commercial & Financial Leadership
* Full ownership of the Hugo‑Burge P&L, delivering revenue, margin and profit targets, with accountability for budgets, forecasts, trading plans and key financial KPIs
* Identify commercial opportunities and risks, driving continuous improvement and overall profitability
Operational Leadership
* Drive conversion from tasting to purchase and increase spend per visitor
* Ensure strong stock management, inventory control, POS governance and full HSE, audit and regulatory compliance
Brand Experience & Leadership
* Act as brand custodian for St Hugo and Grant Burge across all consumer touchpoints
* Lead and develop a high‑performing team, partner cross‑functionally to activate brand strategy, host VIP, trade and media, and drive customer data capture and member acquisition
Kitchen & Dining
* Provide strategic leadership of the kitchen and dining offer with the Executive Chef
* Ensure premium, contemporary, wine‑led experiences while maintaining strong food, wine and service ratings
Additional Requirements
* Availability across a 7‑day roster, including evenings and events
* Ability to cover the Precinct Manager role and undertake occasional domestic travel and out‑of‑hours work
What You’ll Bring
* Proven senior leadership experience in premium hospitality, wine tourism or luxury brand environments, with strong commercial acumen and demonstrated P&L ownership delivering revenue and profit targets
* Experience leading large, multi‑disciplinary FOH, BOH and operational teams, with clear ownership and accountability for performance and results
* Deep understanding of premium service standards, guest experience and brand storytelling, driving conversion, visitation, member growth and long‑term value
* Confidence partnering cross‑functionally with Marketing, Commercial and Tourism teams, and hosting VIP, trade and media audiences at a senior level
