Key responsibilities
- Lead and support a high-performing kitchen team during busy services
- Prep, cook and plate to spec and to time with consistent quality
- Manage mise en place, portioning, stock rotation and waste control
- Uphold strict food safety, hygiene and WHS standards (HACCP-aligned)
- Contribute to menu development, specials and cost control
- Collaborate with FOH to ensure smooth service and great guest outcomes
What you’ll bring
- Proven experience in quality, high-volume kitchens (Italian experience highly regarded)
- Strong knife skills and sound understanding of classical techniques
- Calm under pressure; organised, reliable and team-first
- Pride in cleanliness and an efficient, safe workstation
- Availability for nights/weekends/public holidays as required
- Food Safety certification (or willingness to obtain)
