Established by the Jesuits in 1851, Sevenhill Cellars is the oldest winery in the picturesque Clare Valley and renowned for producing high quality wines from outstanding fruit. The Sevenhill winery is now seeking a highly accomplished Chief Winemaker to lead the winemaking team and continue the unique winemaking tradition of the winery.

We are currently seeking an experienced, visionary and “hands-on” Chief Winemaker to lead our winemaking team and uphold our legacy of excellence.
Position Overview:
Responsible for overseeing all aspects of the winemaking process, from grape harvest to bottle production you will work closely with management, and other departments to ensure that our wines meet our high standards for quality, flavour, and consistency. This is a unique opportunity for a skilled and energetic winemaker with vision to lead a passionate team in a dynamic and unique heritage environment.
Key Responsibilities:
· Uphold the values of the winery’s owners being the Society of Jesus (also known as the Jesuits).
· Lead and manage the winemaking team through all phases of production, including harvest, fermentation, aging, blending, and bottling.
· Ensure the quality and styles of Sevenhill wines are at the forefront of Australian winemaking whilst respecting the history of Sevenhill’s winemaking and viticulture.
· Oversee the development and maintenance of production schedules, budgets, and inventories.
· Manage all aspects of the cellar, including equipment maintenance, hygiene, and safety procedures.
· Maintain relationships with distributors, customers, and media, representing the winery at industry events and tastings.
· Continuously analyse market trends and consumer preferences to develop new wine varieties or improve existing ones.
· Stay abreast of technological advancements in winemaking and implement innovative techniques when appropriate. Help mentor and train staff, fostering a culture of learning and excellence.
Qualifications:
Proven experience (5+ years) as a winemaker, with a demonstrated track record of producing high-quality wines.
A degree in Oenology, Viticulture, or a related field (preferred).
In-depth knowledge of winemaking processes, including fermentation, aging, and blending techniques.
Strong leadership and team management skills, with the ability to inspire and guide staff.
Excellent communication skills, both written and verbal.
A deep passion for winemaking and a keen eye for detail.
Experience working with both traditional and modern winemaking equipment and techniques.
A solid understanding of sustainability practices and environmental stewardship in the winemaking process is a plus.
