Overview
Chandler Macleod are seeking a highly skilled and motivated
Sous Chef
with 7–10 years of culinary experience to join our airline catering production client.
The ideal candidate will bring a passion for food, strong leadership, and a proven track record in high-volume production environments.
This role is responsible for supervising kitchen operations, maintaining quality standards, and ensuring food safety compliance for airline meal production.
Key Responsibilities
Support the Executive Chef in day-to-day operations of culinary production for airline meals (both domestic and international flights)
Lead and supervise kitchen staff, ensuring efficient workflow and team performance
Oversee food preparation, cooking, and presentation according to airline specifications and SOPs
Ensure strict compliance with hygiene, HACCP, and food safety regulations
Manage production schedules to meet tight deadlines and flight dispatch times
Collaborate with menu planning, recipe development, and seasonal updates in alignment with airline partners
Monitor food and labor costs, minimizing waste and maximizing productivity
Conduct regular training and performance evaluations for kitchen team members
Liaise with procurement and logistics teams to ensure timely supply of ingredients and kitchen resources
Maintain detailed documentation for quality audits and airline client inspections
Requirements
7–10 years of progressive experience in culinary roles, with at least 2–3 years in a supervisory or sous chef position
Prior experience in airline catering, institutional cooking, or large-scale food production preferred
Culinary degree or relevant qualified training
Strong knowledge of international cuisines and dietary requirements (e.g., vegetarian, halal, gluten-free)
Excellent organizational and leadership skills
Familiarity with airline catering software, production systems, or ERP tools is a plus
Flexibility to work shifts, weekends, and holidays as per flight schedules
Strong understanding of food safety standards including HACCP, ISO, or similar certifications
Must be available to work over a seven day a week rotating roster.
This could mean day, afternoon or night shifts.
